food and more food

ok, so mm catered a huge event at the new convention center...for 150 people...which entailed wrapping bacon around scallops for most of the morning, and carving up 'meats' most of the afternoon..amongst other preparations......there was a two hour gap between the setting out of the appetizers (4 different items....) and the serving of dinner............that is a long stretch for a caterer to keep up the appetizer table and but wait til just before dinner to assemble salads, plate desserts so they will not be warm or limp....................ah well...but the event is over and i am so glad that i am home................
