recipe swap.....

ok, so many thanks to the mm of the lo for the poppy seed cookie recipe........here is a recipe that i really enjoy....a nice comforting side dish.......i need comfort during these dark days post-election.....

Spinach-Artichoke Casserole
2 (10 oz.) packages chopped frozen spinach, thawed and drained well
1 jar (6 ounces) marinated artichoke hearts, drained and chopped
8 ounces lite cream cheese, softened
1/4 cup soft tub margarine
1/2 cup grated Parmesan cheese
2 tbsp skim or 1% milk
vegetable oil cooking spray
Combine cream cheese, margarine, milk, and Parmesan cheese in a bowl. Beat with a handheld mixer until fluffy. Arrange chopped artichoke hearts in the bottom of a baking dish coated with cooking spray. Arrange thawed and drained spinach over artichoke hearts. Top with cheese mixture. Bake at 350 degrees for 30 minutes, covered, then an additional 10 minutes uncovered. Serves 6. Each serving has 228 calories, 9.6 grams carbohydrate, 10 grams protein, 18 grams fat, 554 mg sodium, and 6 mg cholesterol.
